During the Fall we had lots of Pomelo. They look like huge grapefruits and have a sweeter and milder flavor. In addition to the vitamins and fiber, they also have protein! Certainly, you can just peel and eat them. I also tried them under the broiler for a couple of minutes until the top caramelized! It was so yummy. Here’s recipe for a super healthy nutrient packed lunch using ingredients from our Food Pantry. Serves 4

Citrus Salad

1 Pomelo sectioned and cut into bit sized pieces

4 cups baby spinach or mixed salad greens

½ cup walnuts, almonds, or pine nuts chopped. Or add all 3!

½ cup feta cheese

2 hard-boiled eggs halved

This high protein salad takes less than 10 minutes to prepare. Wash and cut the salad greens and place in a large bowl. Add chopped nuts and cut pomelo and mix together with the greens. Sprinkle the cheese over the top and garnish with the halves of boiled eggs. You can serve with a citrus dressing, oil, or juice from cutting the pomelo. You can also add salt and pepper to your liking. This is also good with balsamic.  Enjoy!
